Introducing the mesophilic culture, ideal for achieving a more distinct buttery flavor and a slightly more open texture in your cheese. This culture is perfect for soft ripened and fresh cheeses, including Chevre, Cream Cheese, Brie, Camembert, Gouda, Edam, Blue, Feta, and Havarti. It contains the two primary cultures of MA011, with diacetylactis producing CO2 and a butter-like flavor and aroma. Cheeses made with this culture will have a somewhat more open texture, and in the case of Gouda, will result in the desired small round holes. The culture contains (LL) Lactococcus lactis subsp. lactis, (LLC) Lactococcus lactis subsp. cremoris, and (LLD) Lactococcus lactis subsp. lactis biovar diacetylactis. The package size is 1 1/2 teaspoons, which is suitable for setting between 6 - 18 gallons of milk.
This mesophilic culture is specifically formulated for a more prominent butter-like flavor and is made in Italy. It is the best choice for making cultured butter, also known as European or Irish butter. It is a favorite for Cream Cheese, Chevre, and Feta.
