Perfect for beginners or pros, our instructions walk you through each step of the cheese-making process. The kit includes citric acid to lower the milk's pH, vegetable rennet to separate the curd from the whey, non-iodized cheese salt to help preserve the cheese, a thermometer, and 1 square yard of butter muslin for draining the whey. The included booklet provides comprehensive directions for making both mozzarella and ricotta, troubleshooting advice, and a recipe for your finished cheese.

We include enough rennet and citric acid to make: 6 lbs. mozzarella and 21–24 lbs. whole milk ricotta; up to 12 lbs. mozzarella plus traditional ricotta from whey (amount will vary); or 42–48 lbs. whole milk ricotta. Traditional mozzarella takes at least 4–5 hours, between fermenting, setting, and stretching; however, our recipe included with this kit takes only 30 minutes with practice! Ricotta takes about an hour to prepare and will need to drain for 1–6 hours.
